This is an easy, 21 Day Fix-approved crock pot recipe that my family loves. Setting it and forgetting it is the best! It takes the stress out of dinner time.
Pineapple Pork Tenderloin (4 servings, varies based on size of tenderloin)
21 Day Fix: 1 serving = 1/4 Green, 1/2 purple, 1 red
Ingredients
– 2 cups of frozen pineapple
– 1 red bell pepper, diced
– 2 1lb pork tenderloins
– 4 TBS apple cider vinegar
– 4 TBS balsamic vinegar
– 2 TBS brown mustard
– Black pepper
– Garlic Powder
Place pork tenderloins in the crock pot and season both sides with black pepper and garlic powder, top each pork tenderloin with 1 TBS of brown mustard and rub it in. Add the apple cider vinegar and the balsamic vinegar to the crock pot. Top with the chopped bell pepper and frozen pineapple. Cook on low for 6-8 hours. Should make about 4 servings, but I chop up the tenderloin and measure out my red portion. The pineapple is soooo delicious and reminds me that winter won’t last forever 🙂

Hello! Since this makes 4 servings and the pepper on filled one green container I only count it as 1/4 green. But you can totally add more if you’d like to fulfill that green container!

Can you use canned pineapple? I couldn’t find frozen in my grocery store. Perhaps just add it towards the end? Thanks!

Hi Laura! The only worry with canned is that added sugar in it! Fresh or frozen are definitely the healthier choices. If you can’t find pineapple I bet frozen

It’s okay!! 1 serving would be 1/2 purple. You can just scoop some pineapple into the container to measure! If you’d like you can have more…I just split it evenly amongst the 4 total servings.

Is the pork tenderloin dry or moist after cooking?

I find it to be moist! If you like the pork more moist you can add a bit more balsamic, or even a bit of water. 🙂

This sounds amazing and is definitely something I am excited to try. Crockpot meals are my favorite, especially when the are 21 day fix approved as well! I was wondering though, do you thaw the pork tenderloin first? And I have fresh pineapple, would that effect the recipe at all?

Hi Audrey! You would not have to thaw the pork! I would make sure to cook in on low for closer to the 8 hour mark. Fresh pineapple would no effect it, especially since you are using the frozen pork since that will add the extra liquid that would otherwise be in the frozen pineapple. Let me know how you like it!! I made it and it was VERY vinegary. I’d suggest replacing the apple cider vinegar with regular apple cider.

I def love the taste of vinegar as well as the health benefits of apple cider vinegar! Always fun and flavorful to added juices to the crock pot! I like to add orange juice to my pork carnitas! So good!

I tried this and combined with another recipe I saw with diced sweet potatoes on bottom with chicken broth and olive oil…and then i went ahead with similar ingredients but upped them for 6 pork chops —> mustard and balsamic with apple cider, bell pepper, white onions, and pineapple chunks. It was delicious!! In retrospect i would nix the sweet potatoes and do same combo with more chunky bell peppers and onions and maybe mushrooms under chops snd seasoning….All served over brown rice. I love the taste of the pineapple with savory balsamic on the pork chops!! Thank you!!!
